With the GRAVITY series, the table becomes a stage – each portion a small work of art that invites guests to discover textures, flavors, and temperatures step by step. A potato "cannelloni," rolled in wonton and wrapped in fine potato threads, surprises with pea and avocado tartare and miso mayonnaise. Seared salmon fillet tataki on sour cream foam and dill oil shimmers in an elegant bowl, while a baked salmon praline in a spring onion thread coat rests on a creamy celery base. The finale is a tower of potato chips, salmon tartare, cucumber gel, and wood sorrel—served on a gray glass plate, minimalist yet expressive.
